For something seriously delicious we have Mushroom and Spinach Pancakes from BBC Good Food. Use your rainbow chard and enjoy these for breakfast, lunch, dinner or anything in between.
The Simple Veganista has an excellent recipe for a Spicy Carrot and Hummus Sandwich. With caraway seeds, coriander and garlic, this is a fabulous lunch, filled with flavour.
Cauliflower and Onion Bhajis from Eatin’ Mess make the most of this tender sweet curd. The chickpea flour is light and nutritious, while the spices add just the right amount of moorishness. You could also use other veggies.
Finally, and I think most deliciously, is this Pork and Cabbage Wonton Soup from Dumpling Sisters. It may take a little longer to prepare, but the result is worth it. Everyone will love it and you can make it meat-free by swapping out the pork for extra mushrooms.
