Mushroom, Carrot and Lentil Filo Parcels are a great meat-free dinner or lunch option. You could also add shaved fennel or grated beetroot for a different flavour combo.

Adam Liaw’s Coconut and Coriander Chicken Curry is definitely worth making with coriander as fresh as ours. It’s simple and quick, leaving you feeling satisfied.

Don’t miss these Pide Rolls with Roast Lamb and Beetroot. If you are short on time you can simply buy bread rolls instead of making the Pide, or even serve the delicious salad on bread with cold meat, nut butter or tofu and skip the cooking altogether.
