Beetroot and chocolate muffins

The recipe comes from a great book by Louise Fulton Keats called Something for Everyone

2 eggs
170ml (2/3 cup) maple syrup
126ml Olive or coconut oil
225 grams grated beetroot
2 tsp milk
225g wholemeal self-raising flour (can substitute regular self-raising)
1/2 teaspoon baking power
30 grams (1/4 cup) Cocoa powder


Preheat the oven to 170 degrees, and line a muffin tin with 15 paper cases

In a large bowl, whisk together the eggs, maple syrup and oil. Stir in the beetroot and milk. Sift in the flour, baking powder and cocoa and stir until combined.

Divide the batter amounts the paper cases and bake in the oven for 20 mins or until the skewer inserted into the centre of the cupcakes comes out clean.
