2 parts olive oil
1 part vinegar
Juice of half a lemon
1 teaspoon Dijon mustard
Cracked black pepper
- Pour the olive oil into a small glass jar so it comes half way up.
- Add vinegar in until it equals half the volume of the oil.
- Add the other ingredients.
I love this because it is super-fast, I usually have all the ingredients and it is both creamy and zesty. It will only last a few days because of the fresh lemon juice which loses its potency.
